Easy Cajun Sausage & Veggies

I whipped this up in under 20 minutes tonight and thought I would share. This is so easy and Paleo-friendly, plus my husband loved it. It is a great recipe to try when you feel tired or are short on time. Also, it is gluten free as long as you check your labels.


1 medium onion

1 green bell pepper

1 red bell pepper

8 large mushrooms (whichever kind you prefer)

3 handfuls of green beans

10 grape tomatoes

1 tsp minced garlic

1 tbsp olive oil

3 medium size sausages (I used Trader Joe’s spicy Italian vino & formaggio chicken sausage. You can use any type of sausage you like but make sure it says gluten free on the label if that is a concern)

2 tbsp Cajun seasoning (you can make your own with paprika, salt, garlic powder, onion powder, chili powder, red pepper flakes and any other spices you would like to add)


Heat the olive oil and garlic in a wok (or large sauce pan) on medium high. Cut the veggies into chunks and toss the onion, peppers, mushrooms, and green beans into the wok. Saute the veggies for 5 minutes and then add the sausage. Stir occasionally for 5 minutes or until the sausage is halfway cooked. Take the sausage out of the wok and cut into 1 inch chunks and toss back into the wok. Continue to stir for another 5 minutes. In between stirring, cut the grape tomatoes in half. Once the sausage looks done, toss the grape tomatoes in the wok and stir for another 2 minutes. Remove from the heat and serve in a bowl or on a plate.

Keep in mind that you can change up the recipe as you like. Substitute broccoli for the green beans or use shrimp instead of sausage. Experiment with the spices or the quantity of each ingredient. Being able to change things up so easily is why cooking in a wok is so great. It is virtually foolproof!
