Pregnancy and Paleo?

So, remember how into the Paleo diet I said I was? Well, strike that. All I am craving these days are saltines and more saltines. I salivate over the thought of saltines like they are a gourmet meal. And on Wednesday night I had a cheeseburger with white cheddar grits as a side (and it was wonderful!)

But, I am trying to get back on the Paleo train. Or at least, have one leg on it. I don’t want to gain all my pregnancy weight in the first trimester, after all. So last night I fixed a really easy curry chicken recipe that my husband and I can eat off of over the next few days. It is based on this recipe from Everyday Paleo but with the spices simplified (because I was lazy), some added carrots and a couple other modifications. So feel free to try either recipe (the original is delicious also).

Ingredients:

4 chicken breasts, cut into bite size pieces

1 can coconut milk

6 oz can tomato paste

1 large onion, sliced or diced

15-20 baby carrots

1 tsp minced garlic

1 tbsp coconut oil

2-3 tbsp curry powder

1 tbsp chili powder

pinch of salt

Heat coconut oil in a large skillet over medium heat. Add the onions and carrots and saute until the onions are translucent and the carrots are slightly tender. Turn the heat down to low and add the minced garlic, curry and chili powder. Stir until the onions and carrots are coated with the spices. Add the tomato paste and stir until the paste is well mixed into the spices, onions and carrots. You may have to mash it around a bit. Next add the add the coconut milk and salt and turn the heat back to medium. Again, stir and mash it until the ingredients are mixed well. Add the chicken, turn down to a simmer and cover. Cook for approximately 15 minutes or until the chicken is done all the way through, stirring occasionally. 

I ate this dish by itself tonight since I wasn’t very hungry but I have served this over broccoli or cauliflower before and it is delicious.

Actually, I lied. I ate it with a side of saltines and it was wonderful!
